Crispy Salami Carbonara
1. Cook pasta in large pan of boiling water according to packet directions until al dente.
2. Meanwhile, heat a non-stick frying pan over a medium heat. Add salami and cook, stirring for 4-5 minutes until salami is golden and crisp. Stir through garlic.
3. Whisk eggs and cream in a bowl or jug. Drain pasta and return to pan. Add salami and oil from the pan, egg mixture and toss with tongs to coat. Add the parmesan and season with salt and black pepper. Divide pasta between serving bowls. Scatter with parsley and extra cheese.
